Chewy Gingerbread Raisin Cookies

Prepare your ovens now! These cookies are cozy-up-around-a-fire-for-the-holidays GOOD and won’t last very long around any cookie aficionados. With a bit more personality than your regular gingerbread cookie, these have big bite and a soft, chewy goodness that pairs well with a cold glass of milk!

We almost didn’t have enough cookies left to take this photo. 

Makes 24 or more

Ingredients

  • 3/4 cup melted butter
  • 1 cup sugar
  • 1 egg
  • 1/4 cup molasses
  • 1 cup raisins (optional)
  • 2 cups flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 cup white sugar for rolling

Cherry White Chocolate Shortbread Cookies

Make room for these cookies in your life and you’ll thank us later. We think shortbread is already one of the best cookies around, but Parsons’ twist of cherry and white chocolate is both delicious and stands out against the other shortbreads out there. (Even purists will appreciate them.) The second-best part about these cookies is just how easy they are to make. With a prep time of 10 minutes and a small handful of ingredients, these treats will be ready to eat in under 30 minutes! (Note: we opted to make ours into cookies instead of bars.)

Our cookie-decorating abilities might not be the best, but these did not last long anyway.

Makes 12 bars 

Ingredients

  • 2 cups salted butter
  • 3/4 cup sugar
  • 2 tbsp vanilla extract
  • 4 cups flour
  • 3/4 cup chopped dried cherries
  • 3/4 cup white chocolate chips
