Test Kitchen: Snowballs from Rock Recipes Christmas

December 20, 2017

Picture this: you're tasked with making a holiday treat for your office or party, but you know there are some dietary-restricted folks and you don't have a ton of time the night before. Enter the Newfoundland Snowball – a delicious dessert recipe in Barry C. Parsons'  Rock Recipes Christmas (Breakwater Books) that will make everyone happy.

See more details below

We made this recipe in an ALU dessert-athon last year and still dream about these Snowballs: they're so chocolatey, with a good chew from the oats and coconut (plus, those things are totally healthy, right?) Plus, if you have vegans in your party crew, you can easily sub in non-dairy milk and vegan butter. Likewise, certified gluten-free oats are great for any celiac folks in the mix.

These did not last long.
